La tradizione vuole che le noci per fare il nocino devono essere raccolte entro il giorno di San Giovanni, cioè il 24 di giugno. Giusto in questi giorni!
La data è indicativa: quel che conta è che il mallo delle noci sia ancora tenero.
Oggi condivido con voi la ricetta del liquore Nocino, quella che era della mia nonna,
nel suo libricino delle ricette scritte a mano.
Quando lo leggo, le pagine un po' sporcate da lei nel consultarlo tante e tante volte, magari con le mani infarinate, mi viene in mente con tenerezza. Quella donna forte e testona, pancia e cuore grandi, che ho sempre visto lavorare.

litro di alcool 90°

kg di zucchero
1
litro di acqua
Mettere
i tutti gli ingredienti in un contenitore di vetro e chiudere
ermeticamente.
Lasciare
in infusione per 40 giorni, e ogni tanto muovere.
Filtrare
e imbottigliare. Consumare almeno dopo 6 mesi.
E siccome un tempo non si buttava via niente...
CORDIALE
Alle
noci aggiungere 1 litro di vino bianco secco.
Lasciare
in infusione per 20 giorni.
Filtrare
e imbottigliare.

NOCINO (of my grandmother Alba)
18 walnuts cut into 4 pieces (to be collected by the day of St. John)
1 liter of alcohol 90 °
1 kg of sugar
1 liter of water
Put all ingredients in a glass container and seal.
Leave to infuse for 40 days, and occasionally move.
Strain and bottle. Consume at least 6 months.
Don't throw away the walnuts:

Add to Walnuts 1 liter of dry white wine.
Leave to infuse for 20 days.
Strain and bottle.
